The Independent

This was a signature cocktail of Bar Gros, created by George Mulholland. Ratafia is an intense, ancient, Catalan digestive made from fruit, walnuts and herbs, often homemade in small batches. Some find it quite challenging to digest but George, always up for a challenge, won the day. The locals loved it, as did everyone else. A masterpiece.

Tonka beans are the seeds of the Kumaru tree from South America. They are high in coumarin, also found in cinnamon, apricots, and cherries. It has a deep warm aroma and wonderfully enhances that of the nut and fruit found in the Ratafia.

  • 50 ml Ratafia dels Raiers
  • 10 ml Kahlúa
  • 20 ml Grey Goose vodka
  • 50 ml full fat milk
  • Tonka bean (or nutmeg if not available)

Put the Ratafia and Kahlúa in a Margarita glass and stir. Shake the vodka and milk with a cube of ice. Finely strain, slowly pouring into the glass, floating it on top. Grate a dusting of tonka bean on top using a microplane.
