Apple Brumble

Created by George Mulholland, one chilly November afternoon at Bar Gros

  • 4 Granny Smith Apples, peeled, cored and chopped
  • 4 tbsp Brown sugar
  • 1 stick Cinnamon
  • 1 Vanilla pod
  • 1500 ml Cider
  • 400 ml Brandy
  • 11/2 Lemons
  • 1 Orange
  • Tonka bean (or nutmeg if not available)
In a pan, over a medium heat, stir sugar until it caramelises.
Add apples, cinnamon, vanilla and the juice of one lemon until the apples soften and brown.
Keep on a low simmer and slowly add the cider then the brandy.
Set aside a few apple slices then sieve the rest, squeezing all the liquid out.
Return the reserved apples to the liquid.
Keep hot in a crock-pot until ready to serve.
Finely grate tonka bean over the glass.
