Eggnog – Olimax' Extreme Lunching

Eggnog

  • 4 large eggs
  • 100 ml cognac
  • 75 ml dark rum
  • 25 ml amaretto
  • 100 ml Monin Pure Cane sugar syrup
  • 500 ml milk
  • 250 ml thick cream

Whisk the eggs and sugar syrup in a blender at top speed for 4 minutes, no more. (Make sure your blender can hold a litre before you start, otherwise make it in batches.) Add the milk, cream and booze then blend for a further minute. Pour into a jug and stick it in the fridge for a couple of hours until it’s really cold. Pour out into individual glasses and sprinkle nutmeg and cinnamon on top.
