Treacle

  • 75 ml Myers’s Rum
  • 15 ml Monin Pure Cane sugar syrup
  • 2 dashes Angostura bitters
  • 80 ml refined supermarket apple juice from a carton

Stir the rum, sugar syrup and bitters in a chilled Old Fashioned glass with a single large cube of ice. Top it up with apple juice. Garnish with apple peel or not.

Another fine drink of Dick Bradsell’s devising. When he used to make a Treacle in the Colony Room Club, he used cheap pasteurised apple juice, in a carton, from the Somerfield supermarket, in Berwick Street, He could have used fancy organic, cloudy stuff, where they tell you the farmer’s name and the apple’s lineage, but he was confident that this juice would give the very best result in the context and you trusted him on that. And of course he was right.
