Daiquiri

  • 75 ml premium white Cuban rum
  • 30 ml freshly squeezed lime juice
  • 20 ml 2:1 sugar syrup

Shake everything with ice until well-chilled. Strain into a chilled coupe glass. Do not garnish.

Daiquiri is the name of a beach and an iron mine near Santiago in Cuba. Supposedly it was created by an American mining engineer, Jennings Cox. However, more than a century before, Royal Navy sailors were given a daily grog ration of rum, water, lime juice, and sugar to combat scurvy. With ice it soon became popular around the Caribbean. Sound familiar?

Apparently it was one of the favourite drinks of both Ernest Hemingway and U.S. President John F. Kennedy, although Hemingway seems to have favoured any and all strong drink.

By all means toss it all, including the ice, in a blender to make Frozen Daiquiri, Cubans love them, but keep the fruit salad for dessert.
